1 loaf of Jimmy John’s Day Old Bread

3 eggs

1/2 cup heavy cream

1/4 cup pumpkin puree

1 tsp vanilla

1 tsp cinnamon

1/4 tsp nutmeg

1/8 tsp ginger




Whisk eggs, cream, pumpkin, and vanilla. Stir in seasonings

Dip bread in egg mixture, fully coating both sides.

Melt butter on skillet and sear both sides on medium heat till golden brown. Finish with syrup and dig in!

1/4 cup butter
6 Golden Delicious apples. Peeled, slices, and cored
1 Tbsp lemon juice
1/2 tsp cinnamon
1/2 cup packed brown sugar (divided)
1/2 cup chopped walnuts
4 cups packed JJ's day-old bread torn into 2 inch chunks
2 eggs, plus 2 egg yolks (room temp)
2 cups milk 
1 tsp vanilla
1/8 tsp nutmeg
Heat oven to 350 degrees. Butter a 1 1/2-quart baking dish (11 by 7 by 1 1/2 inches).
Cut the apples into 1/2-inch-thick slices. In a large bowl, mix together apples, lemon juice and cinnamon.
Melt butter and 1/4 cup brown sugar in a skillet over medium-high heat. Stir in the apple mixture and cook over same medium-high heat, stirring frequently until the apples are softened and begin to turn golden brown (10 to 15 minutes). Stir in the walnuts and put mixture in a bowl. Let cool.
While cooling, toast the bread on a baking sheet in the oven until crisp. Once the apple mixture is slightly cooled, gently spread half into the buttered baking dish. Add the toasted bread to the remaining apples in the bowl and stir. Spoon the mixture into the baking dish.
Combine the eggs, egg yolks, milk, 1/4 cup of brown sugar, vanilla and nutmeg and whisk until the sugar is dissolved. Then pour evenly over the apple and bread mixture and let it absorb the liquid.
Bake 45 to 55 minutes or until browned. CHOW DOWN.

FIFTH cut into cubes and put half in the muffin tin. pour half of the egg mixture over cubes. use the remaining bread cubes to fill muffin tin, pressing into pan and creating a muffin shape. Pour remining egg mixture over (slowly, or else)

SIXTH sprinkle crumb topping over the muffins, then bake that baby up!

1 loaf of Jimmy John’s Day Old Bread (cut into cubes)
1 2/3 cup milk
7 eggs
1 cup canned pumpkin puree
1 tsp vanilla extract
2 Tbsp granulated sugar
2 Tbsp packed brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
Syrup (for serving)
1/2 cup flour
1/4 cup cold butter
2 Tbsp granulated sugar
2 Tbsp packed brown sugar
1/4 tsp ground cinnamon
Mix milk, eggs, pumpkin puree, vanilla, 2 Tbsp sugar, 2 Tbsp brown sugar, 1 tsp cinnamon, nutmeg, and puree in a bowl. Butter the muffin pan. Place half of the cubes in the muffin pan and press down. Pour half of the egg mixture over the bread (pour slowly, or its going everywhere buddy). Fill up tins with the remaining bread and press gently to form muffin like shapes. Pour remaining egg mixture over (make sure to soak all that bread and wipe off any spillage from the tin). Cover with plastic wrap and chill for 2 hours. 
Preheat oven to 350 degrees. Time to make that crumb topping! Combine flour, cold butter, sugar, brown sugar, and cinnamon in a bowl. Sprinkle crumb topping over muffins. 
Bake for 20-25 minutes until golden. Serve warm with syrup.
