FORTH get that Jimmy John's Day Old Bread (fight urge to eat in one bite)

FIFTH cut into cubes and put half in the muffin tin. pour half of the egg mixture over cubes. use the remaining bread cubes to fill muffin tin, pressing into pan and creating a muffin shape. Pour remining egg mixture over (slowly, or else)

SIXTH sprinkle crumb topping over the muffins, then bake that baby up!

SEVENTH drizzle maple syrup over warm muffins and fall in love

INGREDIENTS
1 loaf of Jimmy John’s Day Old Bread (cut into cubes)
1 2/3 cup milk
7 eggs
1 cup canned pumpkin puree
1 tsp vanilla extract
2 Tbsp granulated sugar
2 Tbsp packed brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
Syrup (for serving)
CRUMB TOPPING
1/2 cup flour
1/4 cup cold butter
2 Tbsp granulated sugar
2 Tbsp packed brown sugar
1/4 tsp ground cinnamon
DIRECTIONS
Mix milk, eggs, pumpkin puree, vanilla, 2 Tbsp sugar, 2 Tbsp brown sugar, 1 tsp cinnamon, nutmeg, and puree in a bowl. Butter the muffin pan. Place half of the cubes in the muffin pan and press down. Pour half of the egg mixture over the bread (pour slowly, or its going everywhere buddy). Fill up tins with the remaining bread and press gently to form muffin like shapes. Pour remaining egg mixture over (make sure to soak all that bread and wipe off any spillage from the tin). Cover with plastic wrap and chill for 2 hours.
Preheat oven to 350 degrees. Time to make that crumb topping! Combine flour, cold butter, sugar, brown sugar, and cinnamon in a bowl. Sprinkle crumb topping over muffins.
Bake for 20-25 minutes until golden. Serve warm with syrup.
